Vegan banana bread
Ingredients: (11×25 cm loaf tin):
- 75 g vegan chocolate drops
- 135 ml plant-based milk
- 150 g walnut kernels
- 2 ripe bananas
- 10 g baking powder
– 1 pinch salt
- 250 g apple sauce
- 300 g spelt flour
- 1 tbsp rapeseed oil with butter flavouring (vegan)
To serve:
- fresh rasperries
– Schlagfix ready-to-spray whipping cream
Preparation:
Firstly, preheat the oven to 180 degrees fan.
Mix the baking powder, salt and spelt flour in a bowl. In another bowl, mash two peeled bananas with a fork to a pulp. Add the plant-based milk and apple sauce to the mashed bananas and mix well.
Gradually add the wet ingredients to the flour to form a creamy mixture.
Chop the walnuts and stir in 100 g walnuts together with the chocolate drops. Put the remaining 50 g walnuts to one side.
Grease a loaf tin with rapeseed oil . Then pour the dough into the tin and spread the remaining 50 g of walnuts over the dough.
Bake the banana bread on the middle shelf for approx. one hour at 180 degrees fan oven. Cover with foil after approx. 30 minutes to prevent the walnuts from burning. Leave to cool completely after baking and only then remove from the tin.
Once cooled, the banana bread can be served with the Schlagfix ready-to-spray whipped cream . It also tastes delicious with fresh blueberries.
