Asparagus season will soon be upon us! We have created a recipe for a light sauce that goes wonderfully with asparagus and is quick and easy to prepare.
Ingredients:
200 ml Schlagfix universal whipping cream
80 ml rapeseed oil with butter flavouring (vegan)
200 ml vegetable stock (not too spicy)
20 g flour
1 pinch turmeric
1 pinch nutmeg
2 dashes lemon juice
Salt & Pepper
Preparation:
Heat the rapeseed oil in a pan. Add the flour and sauté briefly. Mix the Schlagfix universal whipping cream with the vegetable stock. The vegetable stock should not be too strongly flavoured, otherwise the sauce will taste too much like vegetables. Add the cream and stock mixture to the roux, stirring constantly. Add a pinch of turmeric for a yellowish colour and season to taste with a squeeze of lemon, a little nutmeg, salt and pepper.
Ready is a delicious sauce!
