Vegan apple pie

Ingredients: for a 26 cm springform pan:

- 150 ml plant-based milk
– 300 g flour
- 100 ml mineral water (carbonated)
- 100 ml rapeseed oil with butter flavouring (vegan) 
- 150 g sugar
- 400 g apple cubes 
- 8 g vanilla sugar
- 1 sachet baking powder
– 1 pinch salt
- 1 tsp cinnamon, as required

To serve:

- Icing sugar, for sprinkling

Preparation:

Grease the springform tin and preheat the oven to 180 degrees top/bottom heat.
Firstly, peel and dice the apples.
Then mix the sugar, flour, baking powder, vanilla sugar, salt and cinnamon together in a bowl. Then add the plant-based milk, mineral water and rapeseed oil and mix well. Do not stir for long so that the carbon dioxide is not lost.
The dough can now be filled into the springform tin. Spread the apple cubes over the dough and press lightly into the dough.
Now bake the cake at 180 degrees for approx. 50 minutes and test with a skewer from time to time.

Once baked, leave the cake to cool and sprinkle with icing sugar if required.
