Vegan pancakes

Ingredients:

Basic pancake recipe:

- 300 ml mineral water (carbonated)
- 1 tsp baking powder
– 1 pinch salt
- 2 tsp vanilla flavouring, liquid
- 400 g flour
- 450 ml oat milk
- some oil (rapeseed oil with butter flavouring (vegan))

Savoury filling:

- 1 sachet of vegan Greek whipped cream - natural 
- Rocket salad
- 5 tomatos
- salt, pepper

Sweet filling:

- 2 tbsp plant-based milk
- 1 Big Spoon Sugar
- 200 g fresh blueberries
– 400 g Whipped cream like mascarpone

Preparation Basic recipe:

For the pancakes, mix the flour and baking powder in a bowl. Then add the mineral water, salt, vanilla flavouring and oat milk. Mix the ingredients with a mixer until you have a creamy mixture.
Place the dough in the fridge for approx. 30 minutes.

Further steps for the savoury filling:

In the meantime, deseed and dice the tomatoes and crumble the vegan Greek with your hands.
Heat the rapeseed oil in a pan and pour some batter into the pan. 
Fry the batter in the pan on one side over a medium heat until the pancake is lightly browned. Now flip. Spread a few crumbs of vegan Greek and 2 tbsp of diced tomatoes on one half of the pancake. Season with salt and pepper to taste. Fold the other half on top and leave in the pan for 2-3 minutes, then flip. Fry for a further 2-3 minutes.
Finally, unfold the pancake and serve covered with rocket.

Further steps for the sweet filling:

Wash and drain the blueberries. Then mix well with the plant-based milk, sugar and Whipped cream like mascarpone . .
Heat the rapeseed oil in a pan and pour some batter into the pan. Fry the pancakes until lightly browned on both sides.
Then serve the pancakes on a plate. Spread the mascarpone filling on one half of the pancake and fold together.
