Our research & development team is constantly working on expanding our vegan range with the aim of replacing animal products as adequately and climate-friendly as possible. Our current project focuses on the bright pink edible mushroom Pleurotus djamor, also known as rose or flamingo mushroom, which inspires us to develop new vegan products due to its valuable ingredients such as essential amino acids, polysaccharides, folic acid as well as vitamin C and vitamins of the B group (vitamin B1, B2) and its distinctive bacon-like taste. In an EU project funded by the ERDF (European Regional Development Fund), we are now first determining the optimal growth conditions for the targeted development of the sensory properties, especially intense flavour with an appealingly firm texture, in the rose mushroom.
