Zubereitung:<\/strong>
Lauch waschen, putzen, l\u00e4ngs halbieren und das Wei\u00dfe und Hellgr\u00fcne in 1 cm dicke St\u00fccke schneiden. Kartoffeln sch\u00e4len und in kleine W\u00fcrfel schneiden. Schalotten fein w\u00fcrfeln. Muskatbl\u00fcte und etwas Salz im M\u00f6rser fein zersto\u00dfen.<\/div>\n

2 EL \u00d6l in einem gro\u00dfen Topf zerlassen, Schalotten darin bei mittlerer Hitze glasig d\u00fcnsten. Lauch und Kartoffeln zugeben und kurz mitd\u00fcnsten. Lorbeer mehrfach mit einer Schere einschneiden. Mit Sojamilch, Schlagfix universeller Schlagcreme und Br\u00fche in den Topf geben und abgedeckt aufkochen. Muskatsalz zugeben und bei milder Hitze 30-35 Minuten kochen.<\/div>\n

Inzwischen den Sauerampfer waschen und trocken tupfen, Bl\u00e4tter ohne die groben Stiele fein schneiden. Sauerampfer in einem R\u00fchrbecher mit 8 EL \u00d6l p\u00fcrieren. Sauerampfer\u00f6l beiseitestellen. Romanesco putzen, in ca. 3 cm gro\u00dfe R\u00f6schen teilen und l\u00e4ngs halbieren.<\/div>\n

Romanesco in einer beschichteten Pfanne im restlichen \u00d6l bei starker Hitze 2 Minuten anbraten. Dann bei mittlerer Hitze weitere 3 Minuten braten und mit Salz w\u00fcrzen.<\/div>\n

Lorbeer aus der Suppe entfernen. Suppe mit dem Schneidstab sehr fein p\u00fcrieren und nach Belieben durch ein feines Sieb streichen. Suppe erneut erhitzen, mit Salz und Piment d\u2019Espelette w\u00fcrzen. Suppe mit Romanesco und Sauerampfer\u00f6l anrichten.<\/div>\n<\/div>\n
